On July 16, 2022, a collaboration event between “Ancient Sake” and “Sushi Seitora” was held.

 

This is a pairing course event where you can enjoy aged sake while tasting 5 Japanese dishes and 8 pieces of nigiri made by Mr. Toyomoto, the owner of Sushi Seitora.

 

From ``Beautiful Sake of Ancient Times,'' we offer 5 brands of Japanese sake that have won awards at global competitions, as well as aged plum wine.

 

This time, we would like to specially introduce the dishes served on the day and the aged sake.

 

 

First item: Corn from Gunma Prefecture, hair crab, purple sea urchin

 

A dish served using sea urchin shells as a plate.

 

It was served to customers along with ``Ancient Sake 2009 Phantom Waterfall'' .
The refreshing white wine-like acidity of ``Phantom Waterfall'' and the rich texture of sea urchin were a perfect match.

 

 

 

Sushi second piece tuna

The tuna used is fresh, hand-caught ``Tuna from Oma'' . We had a luxurious nigiri with the precious "kama", which is only a small amount that can be taken from the body of a large tuna.

The wasabi that accompanied the umami-rich tuna was also freshly harvested that morning in Shizuoka Prefecture .

 

 

Dessert Homemade hojicha ice cream

“2009 Shofuji Umeshu” was served with hojicha ice cream. I served it over ice cream. The marriage of the bitterness of the roasted green tea, the richness of the milk, and the rich sweetness of the rich Shoto plum wine was a perfect dessert to end this course.
