Vintage 1997 is a Junmai Ginjo made using traditional handmade methods that produces a rich flavor. Why is aged sake golden or amber in color?
At first, the new sake is almost colorless and transparent, but as the Maillard reaction, a chemical reaction between sugar and amino acids, occurs, it takes on a variety of beautiful expressions, from a shiny gold color to a deep amber color, depending on the amount of sugar and amino acid, the aging temperature, and the aging period. Of course, there is no problem with the quality of the sake.
How should aged sake be stored? Also, is it best to drink it within the day of opening?
Store it at room temperature or in the refrigerator, away from direct sunlight. It will continue to mature even after opening, so if you leave it for a week, the flavor will change. The impression may be different from right after opening, so that's another fun thing to enjoy.
How should I drink it?
You can fully enjoy the aroma by serving aged sake in a wine glass, shochu in a whiskey or brandy glass, and plum wine in a liqueur glass.
Try it straight at first, so you can experience the full-bodied flavor directly.
After that, we recommend you try it in any way you like, such as twice up, half on the rocks, or with soda.
