In 2023, Japan's first sake brewery specializing in aged sake, "Nihon no Koshukura" (Japan's Aged Sake Brewery), opened in Kakogawa City, Hyogo Prefecture. This place brings together the finest aged sake from all over Japan in one place, storing and managing it in the optimal environment, and is a "storehouse of time" where tradition and innovation blend together.

This historic sake brewery, which is over 100 years old, has opened to the public and has started offering regular tours of the brewery as a new tourist spot in Kakogawa. Why not experience the surprise and excitement that can only be experienced here with all five senses?

・An environmentally friendly sake brewery that uses no refrigeration or electricity, and manages aging at room temperature

・We store over 150 brands of aged alcohol, including carefully selected sake, shochu, awamori, and plum wine from all over the country.

・We manage everything from ultra-long-aged sake that has been aged for over 40 years to new sake that will soon be aged.

・A valuable experience where you can learn about the process from making new sake to storing old sake in a sake brewery that is not open to the public, and enjoy tasting the sake.

01 The history of the brewery and the appeal of aged sake

The tour begins with a look at the origins of "Japan's Aged Sake Breweries," the first breweries in Japan to specialize in aged sake. Why aged sake now? How does time add depth to sake? We will guide you through the culture and value embodied in aged sake, and its profound world, with detailed commentary.

02 Tour of the brewery and tasting of aged sake

Next, we will take you inside the brewery where the aged sake sleeps quietly. You will be given a tour with explanations from the brewers, and you will be able to see the sake sleeping in the brewery, which is particular about storing it at room temperature and using various storage methods. You will also be able to sample the aged sake at each spot.
Tours and tastings of the new sake brewery are also available during the winter season (November to March).

03. Tasting and pairing of aged sake at "Koshu BAR Takumi"

The tour concludes at the brewery's "Koshu BAR Takumi," where you can enjoy a tasting experience of the brewery's proud original aged sake brand "INISHIE" series, paired with chocolate and cheese. Be sure to enjoy the special flavors of barrel-aged sake, blends of aged sake from different years, and blends of aged sake from different breweries.

We will introduce the appeal of aging and the background to the birth of "Japanese Aged Sake Breweries" in an easy-to-understand manner.

② Brewery tour and tasting experience
You can see the sake being preserved in various ways, accompanied by explanations from the brewers.
Additionally, you will be able to sample five different brands of aged sake (15ml each) at each spot.
