Junmai-shu matured for 24 years in a 100-year-old storehouse develops a soft aroma like ripe bananas as well as a flowery scent. The balance of mild sweetness and solid sourness also produce the perfect taste.

Kamaya has been in the business of sake brewing for 270 years in the middle of the Kanto Plain. Taking advantage of its location adjacent to the major consumer city of Edo, Tokyo, the brewery has pursued quality as well as quantity. Its flagship brand is "Rikishi." Its prowess has been proven by its four consecutive years of winning the gold medal at the National New Sake Tasting Competition until 2019, and the top prize in the aged sake category at the global IWC competition.
1997年 Top-quality Kikumori
Long-selling aged sake for locals before the shift to the production of 100% junmai-shu. Characterized by its clear sourness, the caramel or almond-like roasting aroma, smoky flavor, and sweetness and scent of tropical fruits make this aged sake perfectly mellow.

This brewery is popular for its unique label design and naming of the brand "Taxi Driver." The Tohoku region has a conservative image, but Kikumori has a different feel, and the personality of the fifth-generation brewer shines through. This sake features a balance between sweet and sour tastes similar to apricot jam. The brilliant aroma of caramel due to the long maturation process fills your senses and the faint spicy aftertaste can be enjoyed over and over.

This is the oldest sake brewery in Kanazawa, the capital of Kaga, which has cultivated its own unique culture in the Hokuriku region. The crystal-clear water that takes 100 years to reach the brewery from Mt. Hakusan, and the climate with its vibrant four seasons, have supported sake brewing. The brewery continues to evolve its traditional techniques, and in 2001, it gained attention for switching all of its products to junmai-shu (sake made only from rice, water, yeast, and koji).
