Traditional Japanese aged sake used by the Imperial family

This product, "Inishie Amami," is a limited edition set of 500 that combines three types of authentic Amami brown sugar shochu, undiluted, aged for over 10 years.
This is brown sugar shochu that is permitted to be produced only in the Amami Islands. Each of the three types is brewed differently, and the flavors differ depending on the aging process, so you can enjoy comparing them.
Three vintage shochus that have stood the test of time come together to create one product, allowing you to enjoy your own unique "Kokosoku Amami" in the world.

2003 Choose
This shochu is a blend of 2003 and 2005 unblended shochu. This company has mastered the art of blending, and this shochu has a sweet aroma typical of brown sugar shochu, a rich black tea aroma, a slightly spicy taste, and a smoky aftertaste that goes down smoothly.
Brewery: Oki Shuzo, founded in 1917, Wadomari-cho, Okinoerabu Island, Kagoshima Prefecture
This product is from Okinoerabu Sake Brewery, a bottling, processing and sales company established jointly by four small sake breweries on a small island. One of the breweries, Oki Sake Brewery, is the oldest sake brewery on the island and produces the "Erabu" brand. A husband and wife team, they carefully brew, distill and blend their sake by hand.

2009 Yayoi
This undiluted sake is packed with the delicious flavors of black koji and atmospheric distillation, thanks to its long-term aging process. It has a fruity aroma and a subtle sea scent. The sake from this brewery has a crisp taste, while still allowing you to experience the sweetness and rich flavor of the ingredients.

The oldest brewery on Amami Oshima. Using carefully selected high-quality brown sugar and consistent quality Thai rice as the main ingredients, they work passionately every day with the goal of producing rich-tasting brown sugar shochu using the inherited techniques of high-temperature fermentation and atmospheric distillation.

2010 Kana
"Kana" is a series aged in oak barrels. It has a gentle, sweet, floral aroma and a clean taste, with a soft, enveloping, smoky flavor that is pleasant to the touch. The smokiness from the oak barrels goes well with the brown sugar.
Brewery: Nishihira Shuzo, founded in 1927, Naze, Amami Oshima, Kagoshima Prefecture
The Nishihira family originally started making Awamori in Shuri, Okinawa, but moved to Amami Oshima during the chaos of war and started making brown sugar shochu. Nishihira Serena, the great-granddaughter of the first chief brewer, Nishihira Tomi, is now carrying on the tradition as a female chief brewer. "Kana" means "beloved" in the local dialect. The brand name, which is aged in oak barrels, is fitting for this brewery.
