Traditional Japanese aged sake used by the Imperial family

From the Kamakura period through to the Edo period, aged sake was a luxury item that was highly valued for imperial wedding ceremonies and as a lucky charm for people of high status.

Kaga no Tsuki brewed in 1997

This Junmai Ginjo sake is aged using traditional handmade methods to create a rich, mellow flavor. It has a mellow sweetness on the palate, a gentle, full-bodied flavor from aging, and a moderate acidity that envelops it like a veil, making it perfectly balanced.

Brewery: Kaetsu, founded around 1850, Komatsu City, Ishikawa Prefecture
Komatsu, Kaga is known as the gateway to the skies of the Hokuriku region, but in the past it was also the setting for a famous Kabuki play. Kagetsu has been brewing sake here since the end of the Edo period, in search of underground water from the sacred mountain of Mt. Hakusan. The water and climate are just right, and the area is also home to Gohyakumangoku rice, which is perfect for sake brewing. The brewery is delicately constructed, with a distinctive flavor that is pure from the highly polished rice.

Brewed in 1999 by Narimasa

This Gohyakumangoku sake has been aged for over 20 years and is characterized by its light flavor. It has a sweet and gorgeous aged aroma reminiscent of honey and black tea, and a rich flavor with a mellow sweetness and a hint of bitterness. It has a refreshing dry taste with a firm acidity.

Brewery: Narimasa Shuzo, founded in 1894, Nanto City, Toyama Prefecture
This small brewery in the Hokuriku region uses rice suitable for sake brewing, grown locally in Nanto City, and brews sake with the famous water from the lush green Mt. Iozan, called "Yari no Saki no Mizu." It is said that this brewing water was used when the warlord Sassa Narimasa, whose name the brewery takes its name from, sought water and struck the ground with a spear, which caused the water to spring forth and help him escape disaster. The rice is also grown with this water.

Wakatsuru brewed in 2001

This is a Junmai aged sake made with 67% polished rice. It has the aroma of sweet, ripe yellow peach and honey, and a refreshing, minty fragrance. The sweetness and firm acidity fill the mouth, and the aftertaste is long and refreshing.

Brewery: Wakatsuru Sake Brewery, founded in 1862, Tonami City, Toyama Prefecture
Sake brewing experts are called Toji, and there are various styles suited to the climate and geography of each region. The most well-known are Echigo Toji and Nanbu Toji, and Wakatsuru once employed two Toji from each school at its two breweries, competing with each other. Now, one Toji employee inherits the skills of both schools and brews sake, which gives Wakatsuru its unique character.

Brewed in 2007 Kitanosho

Using rare sake rice, Shinriki, this sake is brewed using the traditional Yamahai method to create a strong-tasting sake. Aging gives it a sweet melon aroma and a hint of spice like white pepper. The acidity is enveloped in a soft sweetness, creating an elegant flavor.

Brewery: Funaki Sake Brewery, founded in 1866, Fukui City, Fukui Prefecture
Funaki Sake Brewery uses underground water from the Kuzuryu River, which flows from Mt. Hakusan, a famous mountain in the Hokuriku region, as its brewing water. The brewery is surrounded by rice fields, and the fertile fields produce high-quality rice, such as Gohyakumangoku, which is suitable for sake brewing. Every year, they brew small batches of sake by hand, mainly pure rice sake, and create beautiful sake that pairs well with food.

2009 brewed Hanagaki

This is a Junmai sake with a sweet finish, aiming to be a rich, delicious, long-aged sake. It matures as intended, and the spicy aroma of oriental nakumin and nutmeg blends together with the sweet aroma of ripe pear to create a gorgeous aroma.

Brewery: Nanbu Sake Brewery (established in 1901, Ono City, Fukui Prefecture)
Echizen Ono, where pure water springs up from the city's Junba, has been proud of its sake brewing since ancient times. Since the city first became accustomed to sake brewing in the Meiji period, it has continued to take on new challenges while preserving traditional techniques and has also considered aged sake, earning a high reputation nationwide.
