This unprocessed shochu with 38% alcohol has a surprisingly sweet flavor. The ultra-long term maturation process gives the unprocessed shochu a rich flavor and aroma along with a mellow taste.

Kuma Shochu, a globally recognized geographical indication, is characterized by the use of rice, which is more expensive than other shochu ingredients. In the 500-year history of Kuma Shochu, this outstanding brewery was founded relatively recently. This young brewery once took on the challenge of making barley shochu using atmospheric distillation. That young spirit is now being reborn after 35 years.
2010年 Kana
"Kana" is a series that has been aged in oak barrels. It has a gentle, sweet, floral aroma and a clean taste, with a soft, enveloping, smoky flavor that is very pleasant. The smokiness from the oak barrels goes well with the brown sugar."

The Nishihira family originally started making awamori in Shuri, Okinawa, but moved to Amami Oshima during the chaos of war and started making brown sugar shochu. Nishihira Serena, the great-granddaughter of the first chief brewer, Nishihira Tomi, is currently carrying on the tradition as a female chief brewer. "Kana" means "beloved" in the local dialect. The brand name, which is aged in oak barrels, is fitting for this brewery.
