2006年 Umezu

Tottori prefecture known as the ‘20th century pear’ origin,is alson known as the rare plumes of the ‘wild flowers’. The vintae plum that has been dipped with its mature flower plum for more than 10 years, is thick,sweet and matures in deep depth.

Blessed with spring water from Mt. Daisen, also known as the Fuji of Hoki, Umezu Sake Brewery was founded at the end of the Edo period. In 2005, they switched to making all their sake pure rice, while still maintaining the traditional hand-made method of pressing into a tank. As for shochu, the previous generation developed a shochu brewed with the famous sand dune yam, which has become a representative drink of Tottori Prefecture.

2008年 The eternal Ume Shizuku Kinsen

Based on vintage sake aged for 12 years, only Nanko plums from Minabe Town, Wakayama Prefecture are used. The scent of plums spreads throughout the nasal cavity, creating a soft, sweet and sour plum wine that is unique to sake brewing.

A brewery in Akita, Tohoku, that is covered in snow in winter. The brewery is known for expressing the flavor of rice through its sake, with aged sake at the top of its range. In 2009, it won the Champion Sake Award at the international sake contest IWC, and in 2011 it won the Gold Medal in the aged sake category, showing the brewery's confidence in the quality of its aged sake.

We use all of the local Wakayama prefecture-produced Nanko plums , A gem prepared with vintage awamori. The rustic earthy scent is unique and interesting, and the acidity is also Comfortable. Awamori‘s personality and Nankoume are fused , The balance of aroma and sweetness is wonderful.

Although the brewery was founded relatively recently, it began producing authentic plum wine in 1979. Taking advantage of its location in the nation's No. 1 plum producing area, the brewery has developed and released a variety of plum wines (currently 35 varieties) that bring out the characteristics of fresh Wakayama Nanko plums. The representative brand of shochu is "Fujishiro." This brewery is also notable for its Japanese craft gin.
