1993年 Ume Nishiki 93
This Jummai Ginjo sake was made the year in which the former chief brewer received the Contemporary Master Craftsman Award. The long term maturation process of over 20 years creates a more fragrant nutty aroma and a sweetness similar to yellow peaches. This mature dry sake has a plump quality reminiscent of sherry.

Since its founding in the former Kanada village facing the Seto Inland Sea in the warm Shikoku region, Umekin has been dedicated to simply and wholeheartedly "making delicious sake" by selecting rice and carefully selecting water. This famous Shikoku brewery has been involved in ginjo brewing from an early stage and has won gold medals at the National New Sake Tasting Competition more than 30 times.
1996年 Ichinotani
Aged daiginjo-shu made of Yamada Nishiki, the best sake-brewing rice. With its clear quality like sake nouveau, the aroma of matured Japanese pears, caramel-like sweetness, and spicy taste are perfectly balanced. An aftertaste like caramel popcorn makes this sake very unique.

Although Uno is a brewery in Echizen Ono, due to an ancient anecdote, the sake's name is "Ichinotani" (present-day Kobe City), the name of a place where the Genpei War took place. This is a rare origin that gives a sense of 400 years of history. Each bottle of sake is carefully made. The skill is evident in the fact that they have won the gold medal for 19 consecutive years at the sake competition hosted by the Kanazawa Regional Taxation Bureau.

This unprocessed Jummai Ginjo sake is made with Yamadanishiki rice. The sweet and sour aroma of apricot and the sweet aroma of honey are combined with the refreshing faint scent of herbs. Kitakata has so many sake breweries that it can be called a town of sake breweries, but this is the youngest brewery in the city. The name "Mine no Yuki" comes from Mt. Iide, which forms the prefectural border with Yamagata. The brewers are young and try new brews every year. The mead, brewed only from honey harvested from the rich natural environment at the foot of the mountain, speaks to the individuality of this brewery.
2004年 Kitanosho 04
Junmai ginjo-shu made by polishing Yamada Nishiki and local Gohyakumangoku up to 55% is matured for 15 years consistently at 13℃. A mixture of a sweet and flowery aroma of ripe pears as well as cardamom-like spicy scent makes this sake perfectly mellow.

Funaki Sake Brewery uses underground water from the Kuzuryu River, which flows from Mt. Hakusan, a famous mountain in the Hokuriku region, as its brewing water. The brewery is surrounded by rice fields, and the fertile fields produce high-quality rice, such as Gohyakumangoku, which is suitable for sake brewing. Every year, they brew small batches of sake by hand, mainly pure rice sake, and create beautiful sake that pairs well with food.
2009年 Phantom Waterfall
Aged ginjo sake. Its characteristic is that it first releases a clean acidity, and you can also sense the rich aroma of butter and the sweet aroma of banana, making it very elegant, as if you were drinking a dry white wine. The lingering aroma of nuts is impressive.

Located 50 meters from Toyama Bay on the Sea of Japan, the brewery is filled with meltwater from Mt. Tateyama. The Ijimi area on the banks of the Kurobe River has 20 springs and is one of Japan's 100 famous water areas. Using this water in abundance, the brewery continues to produce refreshing, light-tasting sake that can be enjoyed casually every day with the bounty of Toyama Bay.
