2005 Sweet Potato Shochu Chizuru
The raw material is carefully selected Golden Senkan from Kagoshima Prefecture. The shochu is brewed in traditional earthenware jars and aged in jars inside a stone storehouse. The sweet aroma of fruit caramel tickles your nose, and you can enjoy the rich, mature flavor.
Brewery: Kamishuzo, founded in 1872, Izumi City, Kagoshima Prefecture
Although it shares the border with Kumamoto, this brewery is committed to using ingredients from Kagoshima Prefecture and proudly produces authentic sweet potato shochu. It continues to uphold the tradition of brewing in Japanese earthenware jars, which it has used since its founding. Izumi City is also famous for the over 10,000 cranes that fly there, hence the name "Chizuru."
2008 Sweet Potato Shochu Marunishi
The full-bodied taste of the undiluted shochu is felt directly, and then a spicy aroma similar to pepper rises from the background. Once the sharpness subsides, the sweetness of the sweet potato shochu slowly spreads throughout your mouth.
Brewery: Marunishi Brewery, founded in 1916, Shibushi City, Kagoshima Prefecture
The eastern part of Kagoshima Prefecture, where the Shirasu Plateau spreads, is home to high-quality sweet potatoes. Marunishi Shuzo uses these sweet potatoes to brew sweet potato shochu using the traditional, small-scale, handmade method. The taste and aroma can only be achieved by brewing in earthenware jars, a method that has been used since the company's founding. Marunishi Shuzo is one of the few breweries that focuses on aging.
2006 Barley Shochu Zuiyo
The mash is made with barley from Kumamoto and underground water from Aso, and distilled using traditional methods without applying pressure. It is characterized by the strong, fragrant aroma of barley and a deep sweetness. You can enjoy the impactful and complex flavor that also feels heavy and rough.
Brewery: Zuiyo, founded in 1867, Kumamoto City, Kumamoto Prefecture
The sake ginjo yeast "Kyokai No. 9," which is now commonly used, was developed in Kumamoto. Southern Kyushu is a shochu producing region, but the reason there are so many sake breweries in Kumamoto is that Zuiyo, which was founded with the aim of "making the first sake in Kumamoto," was the beginning. Shochu, sake, and akazake are all brewed with roots in the Kumamoto climate.
