"Kotobuki" Premium Vintage Sake Tasting Set (1997, 1998, 1999)

Kaga no Tsuki brewed in 1997
This Junmai Ginjo sake is aged using traditional handmade methods to create a rich, mellow flavor. It has a mellow sweetness on the palate, and the full-bodied flavor that comes from aging is gently enveloped by a moderate acidity, creating a well-balanced taste.
Brewery: Kaetsu, founded around 1850, Komatsu City, Ishikawa Prefecture
Komatsu, Kaga, is known as the gateway to the Hokuriku region, but it was also the setting for a famous Kabuki play in the past. Kagetsu has been brewing sake here since the end of the Edo period, seeking underground water from the sacred Mount Hakusan. The water and climate are ideal, and the area is also a producer of Gohyakumangoku rice, which is ideal for sake brewing. The brewery is meticulously constructed, featuring a pure, umami flavor thanks to its highly polished rice.
Brewed in 1998 Sato no Izumi
The mellow aroma of black tea and the gentle aroma of hazelnuts fill the air. This aged sake has a good balance of rich sweetness and firm acidity. The aftertaste is long and pleasant, with a sweet and fragrant aroma.
Brewery: Aizu Sake Brewery, founded around 1700, Minamiaizu Town, Fukushima Prefecture
They have been producing sake since the mid-Edo period in Minamiaizu-Tajima, a post town on the highway connecting Nikko and Aizu-Wakamatsu. In harsh conditions where temperatures drop to -20°C in the middle of winter, the sake they brew with ultra-soft water pumped up from 40m underground is characterized by its soft, clean, and gentle sweetness. It has continued to captivate the people who come and go.
Narimasa Brewed in 1999
This Gohyakumangoku sake has been aged for over 20 years and is characterized by its light, elegant flavor. It has a sweet and gorgeous aroma of aging, reminiscent of honey and black tea, and a rich flavor with a mellow sweetness and a hint of bitterness. It has a refreshingly dry taste with a firm acidity.
Brewery: Narimasa Sake Brewery, founded in 1894, Nanto City, Toyama Prefecture
This small brewery in the Hokuriku region uses rice suitable for sake brewing, grown locally in Nanto City, and brews sake with the famous "water from the tip of the spear" from the lush green Mt. Iozan. It's said that this water was used when the warlord Sasa Narimasa, the brewery's namesake, poked the ground with his spear in search of water, and water gushed forth, allowing him to escape disaster. The rice is also grown with this water.
