1997年 Kaga Moon
Junmai ginjo-shu is matured with a traditional handmade technique to develop a rich and full taste. The balance of mild sweetness, rich flavor with maturation, and moderate sourness makes this sake complete.

Komatsu, Kaga is known as the gateway to the skies of the Hokuriku region, but in the past it was also the setting for a famous Kabuki play. Kagetsu has been brewing sake here since the end of the Edo period, in search of underground water from the sacred mountain of Mt. Hakusan. The water and climate are just right, and the area is also home to Gohyakumangoku rice, which is perfect for sake brewing. The brewery is delicately constructed, and is characterized by a pure, umami flavor thanks to its highly polished rice.
1999年 Narimasa
Light and delicate aged sake made by maturing Gohyakumangoku for 20 years. The sweet and flowery aroma of honey or tea made through maturation followed by a broader taste with mild sweetness as well as subtle bitterness. A solid sourness also presents a refreshing dryness.

This small brewery in the Hokuriku region uses rice suitable for sake brewing, grown locally in Nanto City, and brews sake with the famous water from the lush green Mt. Iozan, called "Yari no Saki no Mizu." It is said that this brewing water was used by the warlord Sassa Narimasa, whose name the brewery takes after, who was searching for water and when he struck the ground with a spear, water gushed forth, allowing him to escape disaster. The rice is also grown with this water.
2001年 Young Crane
Aged junmai-shu with a rice polishing rate of 67% characterized by its sweet aroma of ripe yellow peaches or honey as well as mint-like refreshing scent. Sweetness and solid sourness fill the mouth and a long aftertaste presents refreshing dryness.

Sake brewing experts are called Toji, and there are various styles suited to the climate and geography of each region. The most well-known are Echigo Toji and Nanbu Toji, and Wakatsuru once employed two Toji from each school at its two breweries, competing with each other. Now, one Toji employee inherits the skills of both schools and brews sake, which gives Wakatsuru its unique character.
2007年 Kitanosho 07
Brewed with premium sake-brewing rice Shinriki and made with the traditional Yamahai method. Through maturation a melon-like sweet aroma and the spicy taste of white pepper are produced, leading to an elegant flavor where sourness is wrapped in a soft sweetness.

Funaki Sake Brewery uses underground water from the Kuzuryu River, which flows from Mt. Hakusan, a famous mountain in the Hokuriku region, as its brewing water. The brewery is surrounded by rice fields, and the fertile fields produce high-quality rice, such as Gohyakumangoku, which is suitable for sake brewing. Every year, they brew small batches of sake by hand, mainly pure rice sake, and create beautiful sake that pairs well with food.
2009年 Flower fence
Sweet junmaishu aiming for a rich and full aged sake. The oriental spicy scent of cumin and nutmeg as well as the sweet aroma of ripe pears combined in long-term maturation add a flowery taste to this sake.

Echizen Ono, where spring water springs up all over the city, has been a thriving sake brewing area since ancient times. Since entering the sake brewing industry in the Meiji period, the company has followed the philosophy of "delivering high-quality sake to the world through handmade brewing," which has been well received by locals. While continuing to take on new challenges while protecting traditional techniques, the company also produces aged sake, which has earned it high praise nationwide.
