1997年 Top-quality Kikumori

Long-selling aged sake for locals before the shift to the production of 100% junmai-shu. Characterized by its clear sourness, the caramel or almond-like roasting aroma, smoky flavor, and sweetness and scent of tropical fruits make this aged sake perfectly mellow.

This brewery is popular for its unique label design and naming of the brand "Taxi Driver." The Tohoku region has a conservative image, but Kikumori has a different feel, and the personality of the fifth-generation brewer shines through. This time we discovered some aged sake from this brewery. It's fun to compare it with the new sake.

2004年 Snow on the peak

This unprocessed Jummai Ginjo sake is made with Yamadanishiki rice. The sweet and sour aroma of apricot and the sweet aroma of honey are combined with the refreshing faint scent of herbs. The gentle sweet taste of the rice is heart-warming. The profound flavor and subtle mature aroma make it easy to enjoy this sake.

Kitakata has so many sake breweries that it can be called a town of sake breweries, but this is the youngest brewery in the city. The name "Mine no Yuki" comes from Mt. Iide, which forms the prefectural border with Yamagata. The brewers are young and try new brews every year. The mead, brewed only from honey harvested from the rich natural environment at the foot of the mountain, speaks to the individuality of this brewery.

2007年 Sanin Togo

Although it is brewed sweet, it has the viscous taste of aged sake, and the sweetness combined with the sense of maturity gives it depth. The acidity and slight bitterness complete the overall balance.

Their representative brand was named San'in Togo after Lake Togo (formerly Togo Town), which is known for its Hawai Onsen and Togo Onsen. They inherited the brewing techniques of the Izumo Toji and are committed to small-scale brewing using local water, rice, and people. They use the water used to grow the juicy "Nijisseiki" pears, a local specialty, as the brewing water for their sake.
