“Beautiful sake from ancient times -BI-”

<Brand introduction>

"1983 Iwanoi"

Sake Junmai raw material rice: Koshihikari rice polishing ratio 60%
Alcohol content: 14 degrees Tank storage at room temperature Brewing company: Iwase Sake Brewery (founded: 1983, Onjuku City, Chiba Prefecture)

The 1983 vintage is the oldest among the first releases of ancient and delicious sake. The sweet and gorgeous scent of dried fruits and nuts, the spicy flavor, and the strong acidity are reminiscent of a mature white wine.

"1995 Aoi Tsuru"

Sake Junmai raw material rice: Domestic rice polishing ratio 60%
Alcohol content: 17 degrees Low temperature tank storage/room temperature aging Brewing company: Inami Sake Brewery (founded: 1889, Miki City, Hyogo Prefecture)

A craftsman's old sake that is carefully brewed for aged sake and then aged at room temperature after being stored at a low temperature. It has a sweet, gorgeous aroma of honey and almonds, and a mellow sweetness. Just the right amount of acidity and spicy flavor bring the whole thing together.

"2000 Asahi River"

Sake Main brewing raw material rice: Dewa Sansan Rice polishing ratio 70%
Alcohol content: 19 degrees or more and less than 20 degrees Tank storage at room temperature Brewing company: Asahikawa Sake Brewery (founded in 1822, Kawakita Town, Yamagata Prefecture)

As soon as you put it in your mouth, you'll be greeted with an elegant acidity and rich aromas of banana, caramel, and oak that are unique to aged sake. It has plenty of sweetness, with a refreshing plum-like flavor that lingers. The acidity is great and the sharpness isn't too bad.

"2001 Ten'on"

Sake Main brewing raw material rice: Hidahomare rice polishing ratio 70%
Alcohol content: 20 degrees storage in tank at room temperature Brewing company: Kawajiri Sake Brewery (founded: 1839, Takayama City, Gifu Prefecture)

This brewery is proud of its brewed aged sake. The vanilla-like scent matches the sweetness and is reminiscent of chestnuts and bananas. It has a slight aroma of Hida forest and a bitterness derived from Hidahomare sake rice, resulting in a complex and deep aged sake.

"2013 Tamagawa"

Sake Junmai raw material rice: Kitanishiki Rice polishing ratio 66%
Alcohol content: 15 degrees or more and less than 16 degrees Bottles stored at room temperature Brewing company: Kinoshita Sake Brewery (Founded: 1845, Kyotango City, Kyoto Prefecture)

This aged sake has a rich aroma of various spices, aromas like caramel and hazelnuts, and the contrast between firm sweetness and pleasant bitterness gives it a deep flavor.
