This unprocessed shochu with 38% alcohol has a surprisingly sweet flavor. The ultra-long term maturation process gives the unprocessed shochu a rich flavor and aroma along with a mellow taste.

Kuma Shochu, a globally recognized geographical indication, is characterized by the use of rice, which is more expensive than other shochu ingredients. In the 500-year history of Kuma Shochu, this outstanding brewery was founded relatively recently. This young brewery once took on the challenge of making barley shochu using atmospheric distillation. That young spirit is now being reborn after 35 years.
2002年 Kuromatsu-o
Rice shochu with a 45% alcohol content produced via a special distillation method with lowered pressure. This presents a clear taste derived from original rice, thick richness, fine aroma and sweetness.

Morimoto brews rice shochu as well as sake in Iga, Mie, the land of Ise Jingu. He values the local rice and is involved in the cultivation of it, and continues to make soft, rounded sake that matches the climate and food culture of Iga. The brand name "Okina" contains wishes for national peace, bountiful harvests, peace throughout the world, and happiness for all people.
2005年 Chizuru
Locally produced Koganesengan is used as an ingredient, and the shochu is matured in a traditional jar at a stone storehouse. This produces a fruit-caramel-like sweet aroma as well as rich maturation quality.

Although it shares a border with Kumamoto, this brewery is committed to using ingredients from Kagoshima and is proud to produce authentic sweet potato shochu. It continues to uphold the tradition of brewing in Japanese jars, which it has used since the brewery's founding. Izumi City is also famous for the over 10,000 cranes that fly there, hence the name "Chizuru."
2006年 Zuiyo 06
Fermentation mash prepared with local barley and spring water of Aso, is distilled at a traditional pressure level. Characterized by the powerful roasting aroma of barley and rich sweetness, the shochu presents an inspiring and elaborate flavor with a solid and energetic taste.

The sake ginjo yeast "Kyokai No. 9," which is now commonly used, was developed in Kumamoto. The southern Kyushu region is known for its shochu, but the reason there are so many sake breweries in Kumamoto is that Zuiyo, which was founded with the aim of "making the first sake in Kumamoto," was just the beginning. Shochu, sake, and akazake are all brewed with a deep connection to the local climate of Kumamoto.
2007年 Matsufuji Awamori
Vintage awamori with a savory taste of aged koji, and fine sweetness of spring water of Kin-cho used even for washing rice. Unlikely for an alcohol content of 44%, a mild and rich flavor, fine aroma, and sweetness will fill the mouth.

Okinawa has nurtured a unique awamori within its shochu culture. The main ingredient is Thai rice, and all the rice is made into koji before fermenting, which is what distinguishes it from rice shochu from places like Kumamoto. Sakiyama was founded in Akada, overlooking Shuri Castle, and is so passionate about making "even more delicious awamori" that it moved to Kin Town in search of better water.
