Junmai sake brewed using kimoto-zukuri using the prefecture's raw material ``Shinriki.'' It has a caramel-like aroma typical of aged sake, star anise-like spices, and a sweet and gorgeous aroma of ripe fruit.It is characterized by the acidity and pleasant sweetness that can only be found in raw sake.

Funaki Sake Brewery uses underground water from the Kuzuryu River, which flows from Mt. Hakusan, a famous mountain in Hokuriku, as its brewing water. The rice fields surrounding the brewery are fertile, and high-quality rice such as Gohyakumangoku, which is suitable for sake brewing, can be harvested. With a small batch of hand-made sake, we have continued to produce beautiful sake that is easy to pair with food every year, mainly using Junmai sake.
