Sommelier's comment: Junmai Ginjo unpasteurized sake made from Yamada Nishiki rice. The sweet and sour aroma of apricots and honey is mixed with a hint of refreshing herbs. The gentle sweetness of the rice is pleasant. The deep flavor and subtle aged aroma are easy to enjoy.

Founded in 1942, Kitakata City, Fukushima Prefecture is known as the city of sake breweries, and although there are many sake breweries in Kitakata, this is the youngest brewery in the city. The sake is taken from the "Mine no Yuki" snow from Mt. Iide, which forms the prefectural border with Yamagata. The brewers are young, and every year they take on new challenges. The mead, brewed only from honey harvested from the rich natural environment at the foot of the mountain, speaks to the individuality of this brewery.
