Traditional Japanese aged sake used by the Imperial family

Brewed in 1995 by Kamaya
This pure rice sake has been aged for 30 years in a 100-year-old storehouse. It has a gentle aroma reminiscent of ripe bananas and a floral, gorgeous scent. It has a good balance of gentle sweetness and firm acidity, making it a deep flavor.
Brewery: Kamaya, founded in 1748, Kazo City, Saitama Prefecture
Kamaya has been in the sake brewing business for 270 years in the middle of the Kanto Plain. Taking advantage of its location adjacent to the major consumer city of Edo, Tokyo, the brewery has pursued quality as well as quantity. Its flagship brand is "Rikishi." Its prowess has been proven by winning the gold medal at the National New Sake Tasting Competition for four consecutive years until 2019, and the top prize in the aged sake category at the global competition IWC.

Brewed in 1996 Ichinotani
Aged Daiginjo sake made with Yamada Nishiki, the king of sake rice. It retains the clean quality of the new sake, with a well-balanced aroma of ripe Japanese pears, sweet caramel, and spicy bitterness. The aftertaste is reminiscent of caramel popcorn.
Brewery: Uno Sake Brewery, founded in 1620, Ono City, Fukui Prefecture
Although Uno is a brewery in Echizen Ono, due to an ancient anecdote, the sake's name is "Ichinotani" (present-day Kobe City), the name of a place where the Genpei War took place. This is a rare origin that gives a sense of 400 years of history. Each bottle of sake is carefully produced. Their skill is evident in the fact that they have won the gold medal for 19 consecutive years at the sake tasting competition hosted by the Kanazawa Regional Taxation Bureau.

Brewed in 1998 Sato no Izumi
It has a gentle aroma reminiscent of black tea and a fragrant hazelnut scent. It is a matured sake with a good balance of rich sweetness and firm acidity. It has a long aftertaste and a pleasant sweet and fragrant aroma.
Brewery: Aizu Sake Brewery, founded around 1700, Minamiaizu Town, Fukushima Prefecture
They have been making sake since the mid-Edo period in Minamiaizu-Tajima, a post town on the road connecting Nikko and Aizu-Wakamatsu. In harsh conditions where temperatures drop to -20°C in the middle of winter, the sake they brew using ultra-soft water pumped up from 40m underground is characterized by its soft, clean, and gentle sweetness. It has continued to charm the people who come and go.

Brewed in 2001 Ten'on
This brewery's pride and joy is this honjozo aged sake. The vanilla-like aroma matches the sweetness, evoking notes of chestnuts and bananas. You can also sense the subtle aroma of the Hida forest and the bitterness of the Hida Homare sake rice, making this a complex and deep aged sake.
Brewery: Kawajiri Sake Brewery, founded in 1839, Takayama City, Gifu Prefecture
Kawajiri Sake Brewery is a very unique sake brewery. Because of its very small production volume, it is difficult to distribute and can only be purchased locally in Hida Takayama. The brewery specializes in aged sake. Kawajiri sake, brewed using traditional methods, has a rough taste when it is new, and it is only by aging it for a long time that the true essence of the mellow sake emerges.

Brewed in 2007 Kitanosho
Using rare sake rice, Shinriki, this sake is brewed using the traditional Yamahai method to create a strong-tasting sake. Aging gives it a sweet melon aroma and a hint of spice like white pepper. The acidity is enveloped in a soft sweetness, creating an elegant flavor.
Brewery: Funaki Sake Brewery, founded in 1866, Fukui City, Fukui Prefecture
Funaki Sake Brewery uses underground water from the Kuzuryu River, which flows from Mt. Hakusan, a famous mountain in the Hokuriku region, as its brewing water. The brewery is surrounded by rice fields, and the fertile fields produce high-quality rice, such as Gohyakumangoku, which is suitable for sake brewing. Every year, they brew small batches of sake by hand, mainly pure rice sake, and create beautiful sake that pairs well with food.

2009 brewed Hanagaki
This is a Junmai sake with a sweet finish, aiming to be a rich, delicious, long-aged sake. It matures as intended, and the spicy aroma of oriental nakumin and nutmeg blends together with the sweet aroma of ripe pear to create a gorgeous aroma.
Brewery: Nanbu Sake Brewery (established in 1901, Ono City, Fukui Prefecture)
Echizen Ono, where pure water springs up from the city's Junba, has been proud of its sake brewing since ancient times. Since the city first became accustomed to sake brewing in the Meiji period, it has continued to take on new challenges while preserving traditional techniques and has also considered aged sake, earning a high reputation nationwide.

Brewed in 2009, Maboroshi no Taki
Aged ginjo sake. Its characteristic is that it first releases a clean acidity, and you can also sense the rich aroma of butter and the sweet aroma of banana, making it very elegant, as if you were drinking a dry white wine. The lingering aroma of nuts is impressive.
Brewery: Kokokuharu Shuzo, founded in 1887, Kurobe City, Toyama Prefecture
Located 50 meters from Toyama Bay on the Sea of Japan, the brewery is filled with meltwater from Mt. Tateyama. The Ijimi area on the banks of the Kurobe River has 20 springs and is one of Japan's 100 famous water areas. Using this water in abundance, the brewery continues to produce refreshing, light-tasting sake that can be enjoyed casually every day with the bounty of Toyama Bay.
