This brewery is proud of its brewed aged sake. The vanilla-like scent matches the sweetness and is reminiscent of chestnuts and bananas. It has a slight scent of Hida forest and the bitterness derived from Hidahomare sake rice, resulting in a complex and deep aged sake.

Kawajiri Sake Brewery is a very unique sake brewery. Due to its extremely small production volume, it is difficult to distribute and can only be purchased in the local area of Hida Takayama. Our products are specialized in aged sake. Kawajiri's sake, which is brewed using traditional methods, has a rough taste when new, but only when aged for a long period of time can the mellow flavor of the sake be revealed.
