Sake: Pure rice Raw material: Domestic rice, polishing ratio 60%
Alcohol content: 17 degrees low temperature tank storage/normal temperature aging

A craftsman's old sake that is carefully brewed for aged sake and then aged at room temperature after being stored at a low temperature. It has a sweet, gorgeous aroma of honey and almonds, and a mellow sweetness. Just the right amount of acidity and spicy flavor bring the whole thing together.

Brewer: Inami Sake Brewery (founded 1889, Miki City, Hyogo Prefecture)

Hyogo Prefecture is the hometown of Yamada Nishiki, the king of sake rice. The mineral-rich clay soil and climate with large temperature differences made it ideal for cultivating sake rice. There are sake breweries where sake rice is produced. As a sake brewery located in a major Yamada Nishiki production area, Inami aims to produce terroir sake that is brewed in the local climate.

This brewery is proud of its brewed aged sake. The vanilla-like scent matches the sweetness and is reminiscent of chestnuts and bananas. It has a slight scent of Hida forest and the bitterness derived from Hidahomare sake rice, resulting in a complex and deep aged sake.

Kawajiri Sake Brewery is a very unique sake brewery. Due to its extremely small production volume, it is difficult to distribute, and it can only be purchased in the local area of ​​Hida Takayama. Their products are specialized in aged sake. Kawajiri's sake, which is brewed using traditional methods, has a rough taste when it's new, but only when it's aged for a long time does it reveal its true, mellow flavor.
