Kawashiri Brewery(Established in 1839) Kawashiri Brewery is a unique brewer in that its products can be purchased only in Hida Takayama as the production volume is extremely low, and focused exclusively on aged sake. Though the sake nouveau of Kawashiri shuzojo presents a rough flavor, once aged, it produces the true value of mellow sake.
