Sommelier's Comment <br>A cous that exudes the deliciousness of old koji and the sweetness of Kin Town's ``Yamashimizu'' (preparation water) used from washed rice. It's hard to believe that it's 44% Alc. It has a mellow and deep flavor, a rich aroma, and a sweetness that spreads in your mouth.
Brewed by Matsufuji
Founded in 1905, Kin Town, Okinawa Prefecture has cultivated awamori, a unique type of shochu culture. It differs from rice shochu made in Kumamoto and elsewhere in that it uses Thai rice as its main ingredient and is fermented entirely with rice malt (rice that has grown koji mold). Its unique brewing and distillation method is different from any other rice-based distilled liquor, and awamori made in Ryukyu is the only one in the world that has been granted the Geographical Indication (GI Mark) ``Ryukyu.''
