Ancient Wines 2009

Plum wine (liqueur)
Main ingredients: Awamori, plum, brown sugar Alcohol content: 16%
Sommelier's comments
The sweetness of the plum wine is achieved by using Okinawan brown sugar, which is cooked in a local pot, and is made by steeping only Nanko plums from Kishu Minabe in rich awamori. The rich flavor and full-bodied taste is much deeper than that of unaged plum wine, and the combination of sweetness and sourness will make you feel elegant.
Brewed by: Sakiyama Sake Brewery
Founded in 1905 in Kin Town, Okinawa Prefecture
Okinawa has nurtured a unique awamori within its shochu culture. The main ingredient is Thai rice, and all the rice is made into koji before fermenting, which is what distinguishes it from rice shochu from places like Kumamoto. Sakiyama was founded in Akada, overlooking Shuri Castle, and is so passionate about making "even more delicious awamori" that it moved to Kin Town in search of better water.
