Traditional Japanese aged sake used by the Imperial family

Taninogoe brewed in 2006

This is an aged sake that has a strong taste of the original sweetness of rice, which is a characteristic of the sake from this brewery.

Brewery: Shirakawa Meijo (established in 1850 in Nishigo Village, Fukushima Prefecture)
Located at the northern foot of the Nasu Highlands, a resort area known for its Imperial Villa, Nishigo Village is an ideal environment for sake brewing, with its abundant natural environment remaining. This brewery, founded 170 years ago, uses underground water and local rice grown with that water to brew rich, fragrant sake with advanced pasteurization techniques (to preserve the flavor).

Brewed in 2007 Kujudama

This Yamahai Tokubetsu Junmai aged sake is made from Hida Homare rice, a variety of rice suitable for sake brewing in the Hida region. It has a sweet, robust flavor, but also a distinctive crispness.

Brewery: Hirase Sake Brewery (established in 1623, Takayama City, Gifu Prefecture)
Hida Takayama is a popular town that embodies the charm of Japan. Founded here in 1623, this long-established sake brewery has been brewing sake every year for 15 generations over the past 400 years. Using underground water from the Northern Alps and Hida rice, the sake is brewed in the bitterly cold environment. The name "Kusudama" also carries the meaning of "the best medicine."

2009 brewed Hanagaki

This Junmai sake is sweet, aiming to be a rich, savory sake that can be aged for a long time. It matures as intended, and the spicy aroma of oriental nakumin and nutmeg blends beautifully with the sweet aroma of ripe pears to create a gorgeous aroma.

Brewery: Nanbu Brewery (established in 1901, Ono City, Fukui Prefecture)
Echizen Ono, where fresh water springs up from the junction of the city, has been a proud producer of sake since ancient times. Since the city first became accustomed to sake brewing in the Meiji period, it has continued to "dedicate itself to hand-made" sake while preserving traditional techniques and taking on new challenges, including aged sake, which has earned it a reputation nationwide.
