Sushi Makoto is located a 5- minute walk from Nagatacho Station.
There, customers are warmly welcomed by the owner, Mr. Toyomoto, who has 17 years of training at a famous restaurant in Tokyo.
On July 16 , 2022 , “Sushi Seitora” and “Ancient Sake” held a pairing course event. This time, we asked Mr. Toyomoto what he thinks is the charm of ``good old sake'' while taking into account the event.
Q.1 Please tell us about the restaurant's concept and what you value about food.
I value the "one meal" that can only be enjoyed at "Sushi Seitora."
Our restaurant strives to make you want to experience "that taste" and "that atmosphere" again by providing "food" and "space" that you can't find anywhere else.
And an important meal for our customers' precious moments.
We hope to provide a meal that satisfies both the stomach and heart and makes you feel happy.
Q.2 How was it when you actually drank the delicious sake from ancient times?
I thought that the more times you drink aged sake, the more you drink it than the first time, the second time, and the third time, the more you become addicted to it .
As I drank other brands, I became even more aware of the depth of the appeal of old sake.
Q.3 Were there any difficulties when thinking about pairing ancient sake and food for an event?
I thought that old sake, unlike new sake, has a sweeter aroma , so it was very difficult for me as it was my first attempt.
We had a hard time finding a balance where the aroma and taste of aged sake and the food would marry beautifully without canceling each other out. As a result, we used a cooking method that brings out the best of the ingredients, which is a characteristic of our cuisine, to create dishes with aromas and flavors that go well with aged sake. By doing so, I was able to find a beautiful balance between aged sake and food.
At the event, we offered customers the following pairing courses.
Q.4 Please tell us about the pairing menu that Mr. Toyomoto was particularly confident in offering to customers at the event and why.
``Grinded corn served with sea urchin and hairy crab'' and ``Old Sake 2009 Phantom Waterfall.''
``Kozake no Bishu 2009 Geno no Taki'' had a fruity taste similar to wine , so the high sugar corn from Gunma prefecture, the sweetness of the hairy crab, the sweetness of the sea urchin, and the right amount of minerality brought the whole thing together. I made a dish for you. I think this is a pairing menu that perfectly matches the quality of all the ingredients and the aged sake.
Q.5 Please tell us about the impressions you received from customers on the day of the event.
We received comments such as `` I love the aroma of aged sake'' and ``I was impressed by the pairing of food and aged sake.'' Some of the customers had tried old sake before, but they said, ` `The taste was amplified by the real food and real alcohol, and it was the best .'' Even people who had tasted old sake for the first time said, ``I thought it would go well with sushi, so I think many people will enjoy it .''

Q.6 Are there any pairings you would like to try in the future with fine sake from ancient times?
There are many different brands of aged sake, each with different characteristics, so I would like to come up with dishes that match many brands.
Our sushi sari uses red vinegar , so I think it goes well with the deep flavor of aged sake. Therefore, I would like to try matching various brands with our nigiri .
By drinking a variety of brands, you can discover a wide variety of deep flavors of aged sake. The appearance of old sake will change greatly depending on the seasoning and ingredients of the dish.
Perhaps the appeal of old sake is that it allows for a lot of trial and error.
