Sommelier's comment
This cous is full of the deliciousness of the rice malt that takes three days to make, and the sweetness of Kin Town's ``Yamashimizu'' water that is used to wash the rice. It's hard to believe that it's 44% Alc. It has a mellow and deep flavor, a rich aroma, and a sweetness that spreads in your mouth.
Brewed by: Sakiyama Sake Brewery
Founded in 1905 Kin Town, Okinawa Prefecture
Okinawa has cultivated awamori, a unique type of shochu culture. The main ingredient is Thai rice, and the difference from rice shochu made in Kumamoto and other regions is that all the rice is made into koji and then fermented. Sakiyama was founded in Akada, overlooking Shuri Castle, and was so passionate about making awamori that it moved to Kin town in search of better water.
