Tottori, known for its Nissei pears, is also known for producing a rare variety of plums called ``Nobana.'' The vintage plum wine, which is made by soaking ripe wildflower plums for more than 10 years, has a rich, sweet and sour taste, and the roundness that comes from aging gives it a deep feel.

Umezu Sake Brewery was born in the late Edo period, blessed with water gushing from Mt. Daisen, a magnificent peak known as Hoki Fuji. Since 2005, we have changed all of our sake to pure rice, and still maintain the traditional hand-made process of tank-squeezing. As for shochu, our predecessor developed a shochu brewed with the famous Sand Dune Nagaimo, which became Tottori Prefecture's representative liquor.
