Ancient Wine 2001

Sake Junmai Rice: Gohyakumangoku, regular rice polishing ratio 67%
Alcohol content: 18%. Stored in tanks at room temperature.


Sommelier's comments

This is a Junmai aged sake made with 67% polished rice. It has the aroma of sweet, ripe yellow peach and honey, and a refreshing, minty fragrance. The sweetness and firm acidity fill the mouth, and the aftertaste is long and refreshing.


Brewed by: Wakatsuru Sake Brewery

Founded in 1862 in Tonami, Toyama Prefecture

Sake brewing experts are called Toji, and there are different styles in each region that are suited to the climate and soil. The most well-known are Echigo Toji and Nanbu Toji, and Wakatsuru once employed two Toji from each school at its two breweries, competing with each other. Now, one Toji employee inherits the skills of both schools and brews sake, which is a distinctive feature of Wakatsuru.
