Sommelier's comment
67% polished pure rice old sake. It features a sweet and ripe yellow peach and honey scent, and a refreshing mint-like gorgeous scent. The sweetness and firm acidity spread throughout the mouth, and the finish is long and very refreshing and dry.
Brewer: Wakatsuru Shuzo
Founded in 1862 Tonami City, Toyama Prefecture
Sake brewing specialists are called Toji, and there are schools in various places that match the climate. Representatives are Mr. Echigo and Mr. Nanbu, but Wakatsuru used to hire and compete with each of the two warehouses. Nowadays, one employee, Mori, inherits both schools, which makes Wakatsuru unique.
