Traditional Japanese aged sake used by the Imperial family

2006 Umezu
Tottori, known for its Nijuseiki pears, is also known as a producer of a rare variety of plum called "Nobana." These fully ripe Nobana plums are steeped for over 10 years to create a vintage plum wine that is rich, sweet and sour, and has a deep, rounded flavor that comes from aging.
Brewery: Umezu Sake Brewery, founded in 1865, Hokuei-cho, Tottori Prefecture
Blessed with spring water from the magnificent Mt. Daisen, also known as Hoki Fuji, Umezu Sake Brewery was founded at the end of the Edo period. Since 2005, the brewery has been producing all pure rice sake, while still maintaining the traditional hand-made method of tank pressing. As for shochu, the previous generation developed a shochu brewed with the local specialty, sand dune nagaimo, which has become a representative drink of Tottori Prefecture.
2008 Eternal Plum Drops
Based on a vintage sake aged for 17 years, this umeshu is made using only Nanko-ume plums from Minabe Town, Wakayama Prefecture. The plum aroma fills your entire nose, resulting in a plum wine with the soft sweet and sour taste that is unique to sake brewing.
Brewery: Kinmon Akita Brewery, founded in 1939, Daisen City, Akita Prefecture
This brewery is located in Akita, Tohoku, and is covered in snow in winter. Its specialty is expressing the delicious flavor of rice through its sake, with aged sake at the top of its range. In 2009, it won the Champion Sake award at the global IWC sake competition. In 2011, it won a gold medal in the same aged sake category, demonstrating the brewery's confidence in the quality of its aged sake.
Nakano, 2009
This exquisite drink is made entirely from Nanko plums grown locally in Wakayama Prefecture and brewed with vintage awamori. It has a unique, earthy aroma and a pleasant acidity. The unique flavor of the awamori and Nanko plums are fused together to create a wonderful balance of aroma and sweetness.
Brewery: Nakano BC Established in 1961 in Kainan City, Wakayama Prefecture. Although the brewery is relatively new, it began producing authentic plum wine in 1979. Taking advantage of its location in the nation's number one plum-producing region, the brewery has developed and released a variety of plum wines (currently 35 varieties) that bring out the characteristics of fresh Wakayama Nanko plums. Their signature shochu brand is Fujishiro. This brewery is also known for its Japanese craft gin.
