Sommelier's comment
It features a balance of sweetness and acidity like apricot jam. A caramel-like fragrant and mellow aroma spread over a long period of time, and the spicy finish that you feel is a habit.
Brewer: Fukumitsuya
Founded 1625 Kanazawa City, Ishikawa Prefecture
It is a sake brewery with the longest history in Kanazawa, the capital of Kaga, which has cultivated its own culture in the Hokuriku region. The clean water that took 100 years to reach from Mt. Hakusan, and the climate with vivid four seasons supported sake brewing. Continuing to evolve traditional techniques, in 2001 all products were switched to Junmaishu, which is attracting attention.
