This Junmai Ginjo sake is aged using traditional handmade methods to create a rich, mellow flavor. It has a mellow sweetness on the palate, a gentle full-bodied flavor from aging, and a moderate acidity that envelops it like a veil, creating a very well-balanced flavor.

Founded around 1850 in Komatsu City, Ishikawa Prefecture
Komatsu, Kaga is known as the gateway to the skies of the Hokuriku region, but in the past it was also the setting for a famous Kabuki play. Kaetsu has been brewing sake here since the end of the Edo period, in search of underground water from the sacred mountain of Mt. Hakusan. The water and climate are just right, and the area is also home to Gohyakumangoku rice, which is perfect for sake brewing. The brewery is delicately constructed, and is characterized by a pure, umami flavor thanks to its highly polished rice.
