Junmai Ginjo is aged using a traditional handmade method to achieve a rich and rich taste. On the palate, it has a mellow sweetness, a gentle rich flavor due to aging, and a veil of just the right amount of acid for a very well-balanced wine.

Kaga/Komatsu is known as the air gateway to the Hokuriku region, and was once the stage for famous Kabuki plays. Kaetsu has been brewing sake here since the late Edo period, seeking the underground water of the sacred Mt. Hakusan. With suitable water and climate, it is also a production area of Gohyakumangoku, a rice suitable for sake brewing. It is a delicately constructed brewery that is characterized by its high-refined flavor, which has no unpleasant tastes.
