Brewed in 1993 Umekin

This Junmai Ginjo sake was brewed in the year the previous master brewer was awarded the Outstanding Skilled Worker Award. Aged for over 20 years, it has a fragrant nutty aroma and a sweet taste like ripe yellow peach. It is a dry, matured sake with a full-bodied taste reminiscent of sherry.

Brewery: Umekinsansen, founded in 1872, Shikokuchuo City, Ehime Prefecture
Located in the former Kanada village facing the Seto Inland Sea in the warm climate of Shikoku, Umekin has been dedicated to "making delicious sake" by selecting rice and carefully selecting water since its founding. The brewery has been making ginjo sake since early on, and is a famous brewery in Shikoku that has won gold medals more than 30 times at the National New Sake Tasting Competition.

Brewed in 1995 by Kamaya

This pure rice sake has been aged for over 20 years in a 100-year-old storehouse. It has a gentle aroma reminiscent of ripe bananas and a floral, gorgeous scent. It has a good balance of gentle sweetness and firm acidity, making it a deep flavor.

Brewery: Kamaya, founded in 1748, Kazo City, Saitama Prefecture
Kamaya has been in the sake brewing business for 270 years in the middle of the Kanto Plain. Taking advantage of its location adjacent to the major consumer city of Edo, Tokyo, the brewery has pursued quality as well as quantity. Its flagship brand is "Rikishi." Its prowess has been proven by winning the gold medal at the National New Sake Tasting Competition for four consecutive years until 2019, and the top prize in the aged sake category at the global competition IWC.

Brewed in 1996 Ichinotani

Aged Daiginjo sake made with Yamada Nishiki, the king of sake rice. It retains the clean quality of the new sake, with a well-balanced aroma of ripe Japanese pears, sweet caramel, and spicy bitterness. The aftertaste is reminiscent of caramel popcorn.

Brewery: Uno Sake Brewery, founded in 1620, Ono City, Fukui Prefecture
Although Uno is a brewery in Echizen Ono, due to an ancient anecdote, the sake's name is "Ichinotani" (present-day Kobe City), the name of a place where the Genpei War took place. This is a rare origin that gives a sense of 400 years of history. Each bottle of sake is carefully produced. Their skill is evident in the fact that they have won the gold medal for 19 consecutive years at the sake competition hosted by the Kanazawa Regional Taxation Bureau.

Kaga no Tsuki brewed in 1997

This Junmai Ginjo sake is aged using traditional handmade methods to create a rich, mellow flavor. It has a mellow sweetness on the palate, a gentle, full-bodied flavor from aging, and a moderate acidity that envelops it like a veil, making it perfectly balanced.

Brewery: Kaetsu, founded around 1850, Komatsu City, Ishikawa Prefecture
Komatsu, Kaga is known as the gateway to the skies of the Hokuriku region, but in the past it was also the setting for a famous Kabuki play. Kagetsu has been brewing sake here since the end of the Edo period, in search of underground water from the sacred mountain of Mt. Hakusan. The water and climate are just right, and the area is also home to Gohyakumangoku rice, which is perfect for sake brewing. The brewery is delicately constructed, with a distinctive flavor that is pure from the highly polished rice.

Brewed in 1998 Sato no Izumi

It has a gentle aroma reminiscent of black tea and a fragrant hazelnut scent. It is a matured sake with a good balance of rich sweetness and firm acidity. It has a long aftertaste and a pleasant sweet and fragrant aroma.

Brewery: Aizu Sake Brewery, founded around 1700, Minamiaizu Town, Fukushima Prefecture
They have been making sake since the mid-Edo period in Minamiaizu-Tajima, a post town on the road connecting Nikko and Aizu-Wakamatsu. In harsh conditions where temperatures drop to -20°C in the middle of winter, the sake they brew using ultra-soft water pumped up from 40m underground is characterized by its soft, clean, and gentle sweetness. It has continued to charm the people who come and go.

Brewed in 1999 by Narimasa

This Gohyakumangoku sake has been aged for over 20 years and is characterized by its light flavor. It has a sweet and gorgeous aged aroma reminiscent of honey and black tea, and a rich flavor with a mellow sweetness and a hint of bitterness. It has a refreshing dry taste with a firm acidity.

Brewery: Narimasa Shuzo, founded in 1894, Nanto City, Toyama Prefecture
This small brewery in the Hokuriku region uses rice suitable for sake brewing, grown locally in Nanto City, and brews sake with the famous water from the lush green Mt. Iozan, called "Yari no Saki no Mizu." It is said that this brewing water was used when the warlord Sassa Narimasa, whose name the brewery takes after, sought water and struck the ground with a spear, which caused the water to spring forth and help him escape disaster. The rice is also grown with this water.

Brewed in 2001 Ten'on

This brewery's pride and joy is this honjozo aged sake. The vanilla-like aroma matches the sweetness, evoking notes of chestnuts and bananas. You can also sense the subtle aroma of the Hida forest and the bitterness of the Hida Homare sake rice, making this a complex and deep aged sake.

Brewery: Kawajiri Sake Brewery, founded in 1839, Takayama City, Gifu Prefecture
Kawajiri Sake Brewery is a very unique sake brewery. Because of its very small production volume, it is difficult to distribute and can only be purchased locally in Hida Takayama. The brewery specializes in aged sake. Kawajiri sake, brewed using traditional methods, has a rough taste when it is new, and it is only by aging it for a long time that the true essence of the mellow sake emerges.

Wakatsuru brewed in 2001

This is a Junmai aged sake made with 67% polished rice. It has the aroma of sweet, ripe yellow peach and honey, and a refreshing, minty fragrance. The sweetness and firm acidity fill the mouth, and the aftertaste is long and refreshing.

Brewery: Wakatsuru Sake Brewery, founded in 1862, Tonami City, Toyama Prefecture
Sake brewing experts are called Toji, and there are various styles suited to the climate and geography of each region. The most well-known are Echigo Toji and Nanbu Toji, and Wakatsuru once employed two Toji from each school at its two breweries, competing with each other. Now, one Toji employee inherits the skills of both schools and brews sake, which gives Wakatsuru its unique character.

Yamabuki brewed in 2003

It has a fragrant aroma like cacao and exotic aromas of cinnamon and cumin. The aroma opens up more at room temperature than when chilled, and the aftertaste is more lingering and full-bodied. It is a type of aged sake that can be enjoyed even when warmed at a higher temperature.

A brewery in Akita, Tohoku, that is covered in snow in winter. The brewery is known for expressing the flavor of rice through its sake, with aged sake at the top of its range. In 2009, it won the Champion Sake Award at the international sake contest IWC. In 2011, it won the Gold Medal in the aged sake category, and is confident in the quality of its aged sake.

Brewed in 2004 Kitanosho

This Junmai Ginjo sake is made from Yamadanishiki and Gohyakumangoku rice from Fukui Prefecture, polished to 55%, and aged at a constant temperature of 13°C for over 20 years. It has a mellow, sweet aroma like ripe pears mixed with the refreshing aroma of spices like cardamom.

Brewery: Funaki Sake Brewery, founded in 1866, Fukui City, Fukui Prefecture
Funaki Sake Brewery uses underground water from the Kuzuryu River, which flows from Mt. Hakusan, a famous mountain in the Hokuriku region, as its brewing water. The brewery is surrounded by rice fields, and the fertile fields produce high-quality rice, such as Gohyakumangoku, which is suitable for sake brewing. Every year, they brew small batches of sake by hand, mainly pure rice sake, and create beautiful sake that pairs well with food.

Brewed in 2006 Taninogoe

This is an aged sake that has a strong, natural sweetness of rice, a characteristic of the sake made at this brewery.

Brewery: Shirakawa Meijo (established in 1850, Nishigo Village, Fukushima Prefecture)
Nishigo Village, located at the northern foot of the Nasu Highlands, a resort area known for its Imperial Villa, is an ideal environment for sake brewing, with its abundant nature remaining. This brewery, founded 170 years ago, uses underground water and local rice grown with that water to brew aromatic, full-bodied sake using advanced pasteurization techniques (to preserve the flavor).

Brewed in 2007 Kujudama

This special junmai aged sake is made from Hida Homare rice, a variety of rice grown in the Hida region that is perfect for sake brewing. It has a sweet, robust flavor, but also a distinctive crispness.

Brewery: Hirase Sake Brewery (established in 1623, Takayama City, Gifu Prefecture)
Hida Takayama is popular as a town that encapsulates the charm of Japan. Founded here in 1623, this long-established sake brewery has been making sake every year for 15 generations for about 400 years. They use underground water from the Northern Alps and rice from Hida, and brew their sake in the harsh cold. "Kusudama" also means the head of all medicines.

2009 brewed Hanagaki

This is a Junmai sake with a sweet finish, aiming to be a rich, delicious, long-aged sake. It matures as intended, and the spicy aroma of oriental nakumin and nutmeg blends together with the sweet aroma of ripe pear to create a gorgeous aroma.

Brewery: Nanbu Sake Brewery (established in 1901, Ono City, Fukui Prefecture)
Echizen Ono, where pure water springs up from the city's Junba, has been proud of its sake brewing since ancient times. Since the city first became accustomed to sake brewing in the Meiji period, it has continued to take on new challenges while preserving traditional techniques and has also considered aged sake, earning a high reputation nationwide.

Brewed in 2013 Tamagawa

This is a delicious, matured aged sake that has a rich aroma of various spices and a fragrant scent reminiscent of caramel and hazelnuts, and the contrast between its robust sweetness and pleasant bitterness gives it depth of flavor.
