Ryukyu Awamori Main ingredient: 100% rice malt
Alcohol content: 44%
Sommelier's comments
This sake is full of the delicious flavor of the rice malt made over three days, and the sweetness of the "Yamakimizu" water from Kin Town, which is used to wash the rice. It has a mellow yet deep flavor, mellow aroma, and sweetness that spreads throughout your mouth, making it hard to believe that it is 44% alcohol.
Brewed by: Sakiyama Sake Brewery
Founded in 1905 in Kin Town, Okinawa Prefecture
Okinawa has nurtured a unique awamori within its shochu culture. The main ingredient is Thai rice, and all the rice is made into koji before fermenting, which is what distinguishes it from rice shochu from places like Kumamoto. Sakiyama was founded in Akada, overlooking Shuri Castle, and is so passionate about making "even more delicious awamori" that it moved to Kin Town in search of better water.
