2007 Matsufuji Ryukyu Awamori
Ryukyu Awamori: Raw sake
Main ingredient: 100% malted rice
Alcohol content: 44 percent
Sommelier's comment
It is a cous that exudes the umami of rice jiuqu made over three days and the sweetness of "Yamashimizu" from Kin Town, which was used from washing rice. A mellow, deep taste and a mellow aroma and sweetness that cannot be thought of as Alc.44% spread in the mouth.
Brewer: Sakiyama Sake Brewery
Founded 1905 Kin Town, Okinawa Prefecture
Okinawa has cultivated awamori, which is unique in the shochu culture. The difference from rice shochu such as Kumamoto is that Thai rice is used as the main ingredient, and all the rice is fermented after being koji. After being founded in Akada overlooking Shuriakata, Sakiyama is a hot brewery that moved to Kin Town in search of good water from the passion of "more delicious awamori".
