1996 Ichinoya
Sake Daiginjo raw material rice: Yamada Nishiki rice polishing ratio 40%
Alcohol content: 17 degrees or more and less than 18 degrees, stored in bottles at room temperature
Sommelier's comment
Daiginjo old sake made with Yamada Nishiki, the king of sake rice. It retains the beautiful quality of the new sake, with a well-balanced aroma of ripe Japanese pear, sweetness of caramel, and spicy bitterness. The lingering flavor is caramel popcorn.
Brewed by: Uno Sake Brewery
Founded in 1620 Ono City, Fukui Prefecture
Despite being a brewery in Echizen Ono, Uno takes its name from the place name of the Genpei War, ``Ichinotani'' (present-day Kobe City), based on an anecdote from ancient times. It has an unusual history that makes you feel 400 years of history. Each bottle of sake is carefully manufactured. This skill is evidenced by the fact that they have won the Gold Award for 19 consecutive years at the Liquor Competition sponsored by the Kanazawa Regional Taxation Bureau.
