Aged Daiginjo sake made with Yamada Nishiki, the king of sake rice. It retains the clean quality of the new sake, with a well-balanced aroma of ripe Japanese pears, sweet caramel, and spicy bitterness. The aftertaste is reminiscent of caramel popcorn.

Although Uno is a brewery in Echizen Ono, due to an ancient anecdote, the sake's name is "Ichinotani" (present-day Kobe City), the name of a place where the Genpei War took place. It is a rare origin that gives a sense of 400 years of history. Each bottle of sake is carefully made. The skill is evident in the fact that they have won the gold medal for 19 consecutive years at the sake competition hosted by the Kanazawa Regional Taxation Bureau.
