Sommelier's comment
Daiginjo vintage sake using Yamada Nishiki, the king of sake rice. While maintaining the clean liquor quality of the new sake, the aroma of well-ripened Japanese pears, the sweetness of caramel, and the spicy bitterness are well-balanced. The lingering flavor that remains is that of caramel popcorn.
Brewer: Uno Sake Brewery
Founded in 1620 Ono City, Fukui Prefecture
Despite being the brewery of Echizen-Ono, Uno uses the place name "Ichinoya" (now Kobe City), a word of the Genpei War from an anecdote from ancient times. It shares a rare origin that makes you feel the 400 years of history. Sake is carefully manufactured one by one. The technique demonstrated has resulted in winning the gold medal for 19 consecutive years at the liquor show sponsored by the Kanazawa Regional Taxation Bureau.
