2023 is the year of the rabbit. We are pleased to announce the release of a new product, ``Zodiac Series Rabbit,'' which features a rabbit on the package.

The rabbit illustration on the package is the work of an artist with a disability who works at the "Art Village" run by the Pasona Group.

“Art Village” is a “social contribution” activity of the Pasona Group, based on the concept of “talent has no disability,” and provides employment opportunities through “art” (artistic activities) for people with disabilities who are willing to work but find it difficult to work. It was established in 1992 with the aim of expanding. In 2004, we introduced an artist employee system. Many of our employees make it their job to draw, based on a training curriculum tailored to each individual's level of disability and talent.

Both of the sake in the "Zodiac Series Rabbit" are sakes that have been aged since 1999, the year of the Rabbit, two weeks ago. Enjoy the deep and complex flavor created after 24 years.

1999 Fukumitsuya

Sake Yamahai Junmai raw material rice: Yamada Nishiki Rice polishing ratio 65%
Alcohol content: 15 degrees room temperature tank storage

It has a balance of sweetness and acidity similar to apricot jam. Due to its long aging, it has a caramel-like and mellow aroma, and the subtle spicy aftertaste makes it an addictive taste.

A sake brewery with the longest history in Kanazawa, the capital of Kaga, which has cultivated a unique culture in the Hokuriku region. The clear water that took 100 years to reach from the sacred Mt. Hakusan and the climate with four distinct seasons supported sake brewing. Continuing to evolve traditional techniques, in 2001 they switched all of their products to pure rice sake, which has attracted attention.

1999 Narimasa

Sake Pure rice raw material: Gohyakumangoku Rice polishing ratio 60%
Alcohol content: Stored in a bottle at room temperature, above 15 degrees and below 16 degrees.

Gohyakumangoku aged sake aged 20 years, characterized by its light taste. It has a sweet and gorgeous aged aroma like honey and black tea, and a rich taste with a mellow sweetness and a slight bitterness. It has a refreshing and dry taste with strong acidity.

Brewing company: Narimasa Sake Brewery Founded in 1894 A small brewery in the Hokuriku region that uses rice suitable for sake brewing from Nanto City, Toyama Prefecture, and brews with the famous ``spear tip water'' from the lush green Mt. Io. It is said that the military commander Sasa Narimasa, from whom the name of the brewery is derived, sought water and poked the earth with a spear, and water gushed out, escaping disaster. Rice is also grown with this water.
