Brewing company: Wakatsuru Sake Brewery Founded in 1862, Tonami City, Toyama Prefecture Sake brewing experts are called toji, and there are different styles of brewing in each region depending on the climate. Representative examples include Echigo toji and Nambu toji, and Wakatsuru used to have two breweries that hired and competed with each other. Established in 1894. It is said that the military commander Sasa Narimasa, from whom the name of the brewery is derived, sought water and poked the earth with a spear, and water gushed out, escaping disaster. 2023 is the year of the rabbit. We are pleased to announce the release of a new product, ``Zodiac Series Rabbit,'' which features a rabbit on the package.
The rabbit illustration on the package is the work of an artist with a disability who works at the "Art Village" run by the Pasona Group.
“Art Village” is a “social contribution” activity of the Pasona Group, based on the concept of “talent has no disability,” and provides employment opportunities through “art” (artistic activities) for people with disabilities who are willing to work but find it difficult to work. It was established in 1992 with the aim of expanding. In 2004, we introduced an artist employee system. This is a pairing course event where you can enjoy aged sake while tasting 5 Japanese dishes and 8 pieces of nigiri made by Mr. Toyomoto, the owner of Sushi Seitora.
From ``Beautiful Sake of Ancient Times,'' we offer 5 brands of Japanese sake that have won awards at global competitions, as well as aged plum wine.
This time, we would like to specially introduce the dishes served on the day and the aged sake.
A dish served using sea urchin shells as a plate.
It was served to customers along with ``Ancient Sake 2009 Phantom Waterfall'' .
The refreshing white wine-like acidity of ``Phantom Waterfall'' and the rich texture of sea urchin were a perfect match.
The tuna used is fresh, hand-caught ``Tuna from Oma'' . We had a luxurious nigiri with the precious "kama", which is only a small amount that can be taken from the body of a large tuna.
The wasabi that accompanied the umami-rich tuna was also freshly harvested that morning in Shizuoka Prefecture .
“2009 Shofuji Umeshu” was served with hojicha ice cream. I served it over ice cream. The marriage of the bitterness of the roasted green tea, the richness of the milk, and the rich sweetness of the rich Shoto plum wine was a perfect dessert to end this course.
