冷え込む夜に熱燗で古酒の香りひらく

It's the season where you can feel the depth of autumn day by day. Some people may find themselves craving hot sake when the nights get cold.

It is said that warming sake softens the bitterness of sake and makes it easier to appreciate the sweetness.
The characteristics of old sake are its deep aroma and complex taste due to long-term aging. By warming it up, you can enjoy the richness of the expression of aged sake.

Junmaishu is a type of sake that is generally suitable for hot sake. Junmaishu is characterized by its strong umami and firm taste.
This time we would like to recommend two brands of aged pure rice sake that are delicious when served hot.

<Brand introduction>

"1999 Fukumitsuya"

Sake Yamahai Junmai
Raw material rice: Yamada Nishiki rice polishing ratio 65%
Alcohol content: 15 degrees
Room temperature tank storage

It has a balance of sweetness and acidity similar to apricot jam. Due to its long aging, it has a caramel-like and mellow aroma, and the subtle spicy aftertaste makes it an addictive taste.

Brewing Company: Fukumitsuya (Founded: 1625, Kanazawa City, Ishikawa Prefecture)

A sake brewery with the longest history in Kanazawa, the capital of Kaga, which has cultivated a unique culture in the Hokuriku region. The clear water that took 100 years to reach from the sacred Mt. Hakusan and the climate with four distinct seasons supported sake brewing. Continuing to evolve traditional techniques, in 2001 they switched all of their products to pure rice sake, which has attracted attention.

"1983 Iwanoi"

Sake Junmai
Raw material rice: Koshihikari rice polishing ratio 60%
Alcohol content: 14 degrees
Room temperature tank storage

The sweet and gorgeous scent of dried fruits and nuts, the spicy flavor, and the strong acidity are reminiscent of a mature white wine.

Brewer: Iwase Sake Brewery (founded: 1723, Onjuku Town, Chiba Prefecture)

A sake brewery in Chiba Boso, which is located in the metropolitan area but is rich in nature. We are particular about the traditional manufacturing method of ``Yamahaizukuri'' and aged sake. In 1965, we began to seriously work on aging. The brewing water is hard water, which produces a full-bodied sake with a strong flavor, so the ability of this brewery is demonstrated when it comes to aging sake.

Both brands are characterized by deep colors and complex aromas due to aging . In the case of hot sake, the aroma is most intense when it is slightly hotter, around 45 to 55 degrees , and you can enjoy the rich flavor and mellowness.

A unique feature of ``Old and Past Bizake'' is that one gift set contains multiple brands of alcohol. Enjoy the endless possibilities of aged sake by changing the brand and drinking style according to your mood that day.

You can purchase the gift set "Sugo" which includes "1999 Fukumitsuya" and "1983 Iwanoi" from here.
